I suffer from the most nefarious of connected issues - I love to cook and I'm overweight to an unhealthy degree. I've been overweight pretty much since I was 8, getting my clothes in the "husky" section. I've also been cooking since about that time, helping out my dad who was in cooking school as his sous chef, and later developing a love for it independently. I've even taken cooking classes at the Culinary Institute of America. I also love science - and Alton Brown has been able to merge science with culinary genius to provide a fantastic understanding of why recipes come together the way they do. I have put a great deal of faith in Alton Brown's method, and I was not alone when I saw the weight he had gained over the last couple of years. I also noticed how he took it off. Now that he has explained how he did it - and I know he understands the science behind it - I feel ready to take one big leap and (without his knowledge or permission) start eating as Alton Brown suggests. He was always right in the past - why would I suspect that he is not right today? I'm ready to put my faith in Alton.
